PRODUCTION TECHNOLOGY :
After pressing, maceration for 9 days with daily pumping. Fermentation with selected yeasts at a temperature of 20-25°C.Assembly, a small clarification, final filtration and bottling in the early months of the year.
ORGANOLEPTIC CHARACTERISTICS :
Intense ruby red colour, consistent flavour and rich in fruits, the alcoholic strength blends into an aftertaste of wood and liquorice with a fresh and ripe bouquet and at the same time with a a fruity and leathery blend.
RECOMMENDED CUISINE :
Savoury soups, red meats and medium term aged cheeses.
