How We Work


In Mondónico we produce all our wine using only grapes from our vineyards, therefore we are able to guarantee the traceability along the entire chain of production.
 
We directly follow the production cycle of the vine throughout the year (pruning, trimming, binding, etc.). We pay particular attention, with new systems, to the choice of the rootstocks and selection of clones. The typical qualities of the area and territory Bonarda, Barbera, Pinot Nero, Pinot Grigio are favoured.

We adhere to strict specifications to protect the health of the consumer and territory (specification of integrated pest management). We are always looking for innovative solutions which respect the environment and territory.

We collect the grapes of Bonarda, Pinot Nero, Barbera, Pinot Grigio when fully ripe, carefully following the evolution of all the parameters that characterize the product (acidity, alcohol content, etc.) We collect the ripe grapes and take them to the cellar located at the centre of the winery at the top of the hill where the vinification process and, subsequently, storage take place.

Therefore, we dedicate special attention to the grapes since the quality of the wine produced depends on the their quality.
