PRODUCTION TECHNOLOGY :
After pressing, maceration for 6 days with daily pumping. Fermentation with selected yeasts at a temperature of 18-20°C. The wine is then placed in the autoclave where a slow secondary fermentation completes its rustic typicality with a delicate effervescence.
ORGANOLEPTIC CHARACTERISTICS :
Ruby red sparkling colour with a good intensity, sweet flavour, fresh and young, persistent, full bodied bouquet and fragrant with forest fruits remnants.
RECOMMENDED CUISINE :
Soups and savoury white meats.
SERVING TEMPERATURE : 18°C
ALCOHOL BY VOLUME : 11,5% vol
BOTTLE : Bordolese 0.75 litres.
